Summer Salad


I've never been a huge fan of sweet fruity salads. Until now. I love them. Can't make enough of them. So I made one for our 4th of July dinner. It was a hit. A salad with fruit in it is nothing new & there are probably 1,000 different recipes online for them (I have found a few here myself) but I still thought it would be fun to share mine. I named it Clean your plate summer salad because you will do just that. Then you'll go back for more ;)

::The Recipe::

Salad::
-spring lettuce mix (I buy mine at Costco)
-spinach
-purple cabbage
-green onions
-strawberries
-blueberries
-walnuts
-croutons (I love these)
-feta

Dressing::
-1 cup of sugar
-1 tsp salt
-1 tsp dry mustard
-half a cup red wine vinegar
-half a cup of olive oil
(dressing adapted from here)

I added the dressing, feta & croutons onto individual salads so if there are any leftovers (which there won't be, I promise ;) the salad won't get soggy. Nothing worse than soggy salad.
